    Associate degrees—The Foundation

    Gain core culinary or baking and pastry knowledge and skills that are at the foundation of everything you’ll do at CIA—and out in the food world.

    • Culinary Arts—Develop the base for your culinary creativity, from cooking methods to flavor principles to butchery. You’ll learn about sustainability, wellness, responsible sourcing, world cultures and cuisines…knowledge every future food professional needs.
    • Baking and Pastry Arts—Learn the techniques, ingredient function, and design principles behind everything from puff pastry to baguettes to entremets—and then envision and create your unique versions. You’ll also learn to prepare savory fare perfect for your own café.

    Bachelor’s degrees—Next-Level Learning

    Build on the core skills of your associate degree and go deeper by developing the leadership, problem solving, teamwork, and entrepreneurial know-how you need to succeed in specialized areas of the food and hospitality world.

    • Food Business Management—Blend vital business management skills with your passion for food. Gain the leadership skills, management experience, and entrepreneurial know-how to build a successful career and thrive in the business side food.
    • Applied Food Studies—Want a career with global impact? AFS majors graduate with real-world skills, a passion for improving food systems, and a capacity to communicate about complex issues like food waste, food insecurity, sustainability, and food justice.
    • Culinary Science—Create the food of the future with a degree in culinary science that prepares you to innovate in the kitchen or work in a food research and development environment for a leading food company, restaurant group, or product development laboratory.
    • Hospitality Management—This next-level, integrated program not only provides an arsenal of business-focused hospitality skills, but it also goes beyond to provide the critical hands-on, food and beverage, experience you need to become a well-rounded hospitality leader.

    Campus Highlights

    • At the center of our 170-acre campus is Roth Hall, named for CIA co-founder, Frances Roth. This majestic five-story, 150-room building houses three of the college’s student-staffed restaurants; state-of-the-art teaching kitchens, bakeshops, and classrooms; the campus store; and Farquharson Hall, a spectacular student dining area.
    • The Conrad N. Hilton Library features one of the largest collections of culinary literature in the country, totaling 67,000 volumes. Here you’ll also find our Library Learning Commons where students can get tutoring assistance for both academic courses and hands-on skills such as knife cuts and cake piping.
    • The Colavita Center for Italian Food and Wine is the only facility of its kind in the world—the 18,000-square-foot center houses the college’s Italian-themed restaurant, Ristorante Caterina de Medici; classrooms and kitchens; and the Culinary Science Lab supporting students in the college’s culinary science bachelor’s degree program.
    • The Marriott Pavilion, an expansive 42,000-square-foot facility, is the largest gathering place for events on campus. The two-story building houses the 800-seat Ecolab Auditorium and conference center. It’s home to graduation ceremonies, world-class conferences, lecture series and education symposiums, and cultural events.
    • The Student Commons, offers students amazing dining, athletic, and recreational facilities. The Student Rec Center includes a full-size gymnasium, indoor track, racquetball courts, a six-lane pool, fitness center, and various aerobic and fitness programs.
    • The Egg, is a popular dining venue and hangout space that includes an award-winning student-run craft beer brewery and pop-up restaurant designed and operated by bachelor’s degree students.

    The award-winning restaurants at the CIA New York campus are part of our students’ educational experience. Food and Reservations are suggested for each of our award-winning restaurants except the Apple Pie Bakery Café.

    American Bounty Restaurant—With a focus on the seasons and products of the Hudson Valley, contemporary and traditional regional dishes are brought to life at the American Bounty Restaurant in an honest and flavorful way.

    The Bocuse Restaurant—Reimagines the execution of classic French cuisine through the lens of ultra-modern cooking techniques, brings a new style of casual yet sophisticated service, and offers breathtaking architectural interior design.

    Ristorante Caterina de’ Medici—Truly authentic regional Italian cuisine takes center stage in this “Best of the Hudson Valley” award-winning restaurant. Dining at this grand Tuscan-style villa is a culinary escape to another world without ever having to leave the beautiful Hudson Valley.

    Apple Pie Bakery Café—Named one of America’s Best Bakeries by Food & Wine, Apple Pie Bakery Café has something to suit all tastes with crave-worthy sweet and savory selections and classic café fare.
